Domaine Sebastien Christophe
Domaine Christophe is the ultimate underdog in Chablis, a charming, enthusiastic, and hard-working vigneron. The vinous adventure began in 1999 when Sebastien was gifted half a hectare of vines and decided to make a run for it. He planted vineyards around the family farm on the plateau above the village of Fyé (located just behind the Grand Crus) almost all were Petit Chablis. He then acquired plots in Chablis and 3 of the most outstanding Premier Crus: Montée de Tonnerre, Mont de Milieu and Fourchaume. Renting additional vineyards which Sebastien farms entirely. The work in the vineyards have always been mindful to the living and are under organic conversion.
With now more than 30 hectares of vineyards, he still finds time to cultivate around 40 hectares of crops and organising this Year biggest wine event in Chablis “La Saint Vincent”.
The winemaking is as discrete as possible to showcase the quality of the vineyards, mainly using stainless-steel and only a handful of barrels can be seen in his winery.
Sebastien export most of his production making it hard to find his wines in Burgundy and even France. His agent in Paris being a long-standing friend, which facilitated the connection. Even here in the UK his wines never made it to a restaurant table, until now 😊.
The Wines
Sebastien is the ultimate underdog in Chablis. Based in the village of Fye behind the Grands Crus hills, his Chablis are elegant and pack a punch, way above their village status. From plots across the Domaine with slightly more southerly aspect. With classic mineral, crushed stone back bone, his wines always have an elegant creaminess from the lees contact, orchard fruit, lemon curd and salty minerality to boot. Sebastien is in organic convertion, working sustainably, hand harvesting, indeginous yeasts. Using stainless steel vinification to have minimal winemaking impact to showcase the terroir. This is Chablis wines at its finest, value for money, will go down well with rock oysters is the best pairing!

His Petit Chablis has become a staple amongst our customers in a relatively short period. The value here is exceptional. Grapes from sites on the plateau just north of Chablis are treated according to each parcels' needs each growing season. The quality of the fruit really shows here, energetic, limestone acidity is backed by crisp orchard fruit like pears and green apples. The lees contact here allows the wine to retain its minerality but also display weight and depth. The Domaine is in organic conversion, working sustainably, hand harvesting, indigenous yeasts. Using stainless steel vinification to have minimal winemaking impact to showcase the terroir. Ideal wine to always have on hand at home, in your wine rack or chilling in the fridge. This Premier Cru site, with its limestone-rich soils and southern exposure, yields a more powerful, layered style of Chardonnay, and 2023 brings added clarity and lift.
The nose is compact yet expressive, with notes of lemon peel, white peach, crushed shell, and subtle hints of hazelnut and flint. The palate is taut and finely chiselled, offering vibrant acidity and a firm mineral core. Ripe citrus and orchard fruit give way to saline notes and a faint touch of savoury lees character, all wrapped in a persistent, elegant finish.
From one of Chablis’ most iconic Premier Cru vineyards, Sébastien Christophe’s Fourchaume 2023 offers a beautiful balance of elegance, intensity, and site expression. Raised predominantly in stainless steel to preserve freshness, this wine showcases the purity of Chardonnay from the right bank of the Serein.
The nose is crystalline and lifted, with aromas of green apple, lemon curd, and white peach, layered with oyster shell, chalk, and a whisper of white blossom. On the palate, it's sleek and vibrant, with laser-cut acidity and a mouth-watering mineral backbone. A gentle roundness mid-palate hints at the warmth of the vintage, while the finish is long, saline, and finely etched.
